Mama Gloria's Fried Rice

We heard that if we wanted to celebrate the Chinese New Year to not go to China Town because it's too crowded and crazy so we stayed home. All he Chinese restaurants are booked as well so what are we to do? Make our own Chinese meal of course! We made my mom's delicious fried rice.

Mama Gloria’s Fried Rice 
Ingredients:
3 Tablespoon of oil
1 teaspoon of fresh ginger (optional)
1 medium onion
½ cup of green pepper
½ cup celery
2 cups of cabbage
½ cup of ham
3 cups of cooked rice
½ cup of corn or peas (optional)
2 eggs (scrambled)
½ cup of shrimp (optional)
½ cup of cashews (optional) 
Soy sauce to taste

The main key to making fried rice is using rice that has been previously cooked. One of the secrets of fried rice also is that the ingredients are cooked separately; helping maintain their distinct flavors and then combine them in the final stages of cooking. 
Preparation:
 Begin by heating a tablespoon of oil in a pre-heated wok or frying panon medium heat, add: ginger, onion, green pepper celery and cabbage. In a separate pan heat another tablespoon of oil to cook the ham and shrimp.  Reheat the rice and add to it the vegetables, then add the meats, scramble the eggs separately and add to the rice.  Add cashews as the final stage and soy sauce to taste.
